Winter warmer #5 - Butternut Squash, Apple and Lentil Soup

It is that time of year again! The evenings are drawing in, the temperature is dropping and I don't get funny looks for making huge pots of healthy wintery soups!

Longer standing readers will know that in my book you cannot go wrong with either butternut squash or lentils. Here is a bit of information about why;


Butternut Squash: is commonly referred to as a 'power food'. It is high in vitamin B6, antioxidants (helps with prevention of inflammation related problems) as well as vitamin C and provides a lot of potassium.

Lentils: the high fibre content can help to lower cholesterol. They are also high in magnesium which is great for the heart. Additionally they are low in calories and fat.

Ingredients
1/2 Butternut Squash
2 Eating apples
100g Lentils
3 tsp ginger paste
2 tsp curry powder
1/2 red onion
3 cloves garlic
1 litre vegetable stock 
1tbsp olive oil

Method 
Heat the oil in a saucepan and mix the curry powder in. 

Grate the apple and onion and stir in. Add the ginger paste and garlic and cook for 5 mins.

Grate the butternut squash into the pan and then add the lentils and vegetable stock.

Simmer for 20mins and then blend to consistency desired.
