Banana-oat cake made with yoghurt

After the success of making Lemon and Poppy Seed Muffins with Yoghurt I went on the hunt for more favourites which I could make with Alpro Soya Yoghurt (which as an FYI I wouldn't recommend eating by itself, especially not the plain vanilla version).  This one is adapted from this Nigella recipe for 'best ever banana bread'


Ingredients:
  • 70 g lurpak lighter
  • 100 g caster sugar
  • egg
  • 450 grams bananas (mashed)
  • 75 ml Alpro soya yoghurt
  • ml vanilla essence
  • 225 g plain flour
  • teaspoon baking powder
  • teaspoon ground cinnamon
  • 50 raisins
  • 90 g rolled oats

method:
  1. Preheat oven to 180C/350F/gas 4.
  2. Grease and line a square brownie tin.
  3. Beat the butter and sugar together until creamy and then add the egg and continue beating until smooth.
  4. Add the mashed bananas, yoghurt and vanilla essence. Sift together flour, baking power and cinnamon  and beat this gradually into the banana mix.
  5. Finally stir in the raisins and oats. Bake for 40 mins until a cocktail stick inserted comes out clean.
