One of my weaknesses has long been Mexican food, white refined (and frankly empty-calorie) wraps with lashings of guacamole (well it was an avocado once, right?!). Obviously such an excessive dish was a no-no when losing weight so....
This healthy twist on the Mexican classic is filling, delicious and low in calories. The Philadelphia acts as a great substitute for sour cream and the fresh tomatoes provide some of the flavour traditionally given by salsa.
1/2 Red Repper
150g Chicken Breast
2 tbsp Low Fat Philadelphia with Chives
2 Wholemeal Discovery Fajita Wraps
1 tbsp Vegetable Oil
Calories (for meal):
650 Calories (substituting Chicken with Turkey, Vegetable Oil with 'Frylight' and not having the Philadelphia will all reduce the calorie content)
Stir fry the Onion, Pepper and Chicken breast until brown, add fajita seasoning.
Dress the wraps with lettuce and chopped fresh tomatoes, place warm mixture on wraps and top with Philadelphia.
